Yarra Valley Salmon fights back

A little over a year after the devastating Black Saturday bushfires wiped out most of its fish stocks – around 13.5 tonnes - boutique aquaculture operation Yarra Valley Salmon says it is on the road to recovery.

Predicting that it would be mid-2011 before fish stocks were back to pre-bushfire levels, the company has turned to caviar, supplying restaurants in New South Wales, Victoria, Western Australia and Queensland.

Yarra Valley Salmon takes a natural approach to rearing and milking the fish, using no antibiotics and chemicals, and is currently going through the process of gaining organic certification.
